Dee Smyth, Senior Wedding Coordinator
Dee has been making wedding dreams come true at the County Arms for over five years. Her favourite spot is the Georgian Drawing Room – with its grand windows and cosy fireplace, it’s the perfect place to relax with a coffee or a glass of Pinot Grigio from The Shaker Room.
When dining, Dee loves the Goat’s Cheese Tartlet in Bar 62 – flaky pastry and creamy filling make it a firm favourite. Around Birr, she enjoys shopping at The Stables on Oxmantown Mall, full of beautiful fashion, gifts, and Irish-designed homewares. For a day out, Birr Castle Demesne is a must-see, especially the Leviathan telescope and Science Centre.
In 2025, Dee was named “Wedding Coordinator of the Year Leinster” by Weddings Online, a well-deserved recognition of her dedication and skill.
What Dee loves most about working here is the busy, fun atmosphere and helping couples bring their dream weddings to life – it’s a real honour to be part of such special days.
Shannon Maher, Wedding Coordinator
Shannon has been with us for over four years. Her favourite secret spot? The Garden Trail – perfect for a peaceful stroll and a bit of fresh air. When she’s off duty, you’ll find her enjoying an Espresso Martini or the light and flavoursome Baked Fillet of Seabass.
Locally, Shannon loves spending Sunday afternoons at Memory Lane café with her family and dog, followed by a walk in the castle grounds. For a bit of spooky fun, she often takes visitors to Leap Castle, said to be Ireland’s most haunted.
What she loves most about working here? The friendly atmosphere and great craic among the team that make every day enjoyable.
Moya Dickson, Wedding Coordinator
Moya has been with us for nearly 2 years, having also worked here in the past. Her favourite spot is the hotel gardens – stunning and perfect for a peaceful walk. She also loves the Glass House, a cosy spot to enjoy the garden views.
When dining, Moya’s go-to is an Aperol Spritz in the Shaker Room with a beef fillet from Hacket’s – always cooked to perfection. Locally, she enjoys browsing Hedgerow’s boutique and relaxing at Woodlands Café & Garden Centre with coffee and homemade treats.
What Moya enjoys most here is the people she works with and being part of couples’ special wedding days – every one is unique and full of happiness.
Conor Hickson, Banqueting Manager
Conor has been with the County Arms for over seven years, with a break in between. His favourite spot? The potting shed with the fire going – a perfect cosy retreat. When it comes to drinks, Conor opts for a Whiskey Sour, and his top dish is a medium rare Ribeye Steak.
Locally, he enjoys the Memory Lane Café opposite Birr Castle – a great spot to relax. For some fresh air and scenic views, Conor often takes visitors to Lough Boora, which offers plenty of running routes and outdoor trails.
What Conor enjoys most about working here is the friendships he’s made over the years with colleagues past and present.
